Voor de gnocchi:

  • 500 gram aardappels
  • 2 eieren
  • 100 gram bloem
  • 1 snufje zout

Voor de saus:

  • 500 gram kastanje champignons
  • 1 rode paprika
  • 2 teentjes knoflook
  • 1 ui
  • 1 theelepel paprika poeder
  • 1 theelepel italiaanse kruiden
  • 100 milliliter water
  • 3 eetlepel creme fraiche
  • 1 courgette


  • Schil de aardappelen en snij ze in kleine stukjes. Kook ze dan in ruim water voor ongeveer 20 minuten. Giet dan de aardappelen af en maak het tot puree met de stamper. Laat het dan even rusten.
  • Snij in de tussentijd de champignons en paprika in kleine stukjes. Bak deze kort aan in de koekenpan met de ui en knoflook. Voeg dan ongeveer 200 mililiter water toe en laat dit ongeveer 10 minuten koken. Pureer dan de saus. Laat deze dan op laag vuur pruttelen.
  • Snij de courgette in kleine plakjes en bak deze in de koekenpan gaar. Leg ze daarna even apart.
  • Meng dan het ei, bloem en zout door de aardappel puree. Bestrooi het werkblad dan het werkblad met bloem zodat het deeg niet zo blijft plakken. Verdeel dan het deeg in vier gelijke stukken en maak van de bol een steng. Snij deze streng dan in stukjes van ongeveer 2 cm. Rol deze stukjes over een vork om een mooi patroon te krijgen.
  • Kook de gnocchi voor ongeveer 5 minuten in een pan in ruim water. Haal dan de gnocchi eruit en bak deze voor ongeveer vijf minuten aan in de koekenpan. Dan worden ze mooi krokant van buiten.
  • De saus is nu al het goed is al iets dikker aan het worden. Voeg dan de kruiden en creme fraiche toe. Laat het dan nog ongeveer twee minuten koken en dan is de saus klaar.
  • Maak dan het bord op met de gnocchi, saus en courgette.
