Het basisdeeg van ravioli is vrij makkelijk te maken. Je kunt ravioli dan vullen met allerlei verschillende vullingen. Je kunt hierbij denken aan spinazi en ricotto maar ook eekhoorntjesbrood of verschillende soorten kaas. Met dit basisrecept kun je allerlei variaties maken.
Genoeg voor 2 personen
  • 300 gram bloem
  • 3 eieren


  • Doe de bloem in de mengkom en voeg een ei toe en kneed tot het ei is opgenomen. Voeg dan ook het tweede ei toe. Mocht het deeg dan nog niet soepel genoeg is, voeg dan ook het derde ei toe. Kneed het deeg tot een bal en wikkel dit in folie. Leg het deeg voor ongeveer 30 minuten in de koeling.
  • Haal het deeg dan uit de koeling en verdeel het in vier stukken. Rol de vier stukken plat met de deegroller tot ongeveer 2 millimeter.
  • Snij dan vierkantjes uit het deeg van ongeveer 3 centimeter bij 3 centimeter. Leg dan op een vierkantje een toefje vulling in het midden. Leg dan er dan een ander vierkantje op. Druk dan met een vork rondom het deeg op elkaar.
